Making dinner decisions can be tough, especially when recipes labeled as “quick and easy” turn out to have long ingredient lists and numerous steps. That’s why I often opt for traybakes or one-pot meals when trying out new recipes.
Traybakes are a convenient way to prepare a family meal as everything, from chicken to vegetables, cooks together in a single large tray in the oven.
I enjoy experimenting with chicken traybake recipes and have recently tried two standout versions from celebrity chefs Rick Stein and Mary Berry.
One of my favorite recipes is Mary Berry’s Mediterranean all-in-one chicken, which combines succulent chicken with vibrant vegetables for a burst of flavors. While I followed the recipe closely, I made a couple of adjustments, omitting green olives and extending the roasting time slightly.
Rick Stein’s chicken traybake recipe features chicken thighs on a bed of fennel, courgette slices, and baby potatoes. Using fresh lemons for flavoring, this dish requires pan-searing the chicken before baking to achieve a crispy skin and tender meat.
Despite the additional preparation involved in Rick Stein’s recipe, the flavor outcome surpasses that of Mary Berry’s version. I found Rick’s dish to be more cost-effective due to its simpler ingredient list.
Overall, both traybake recipes offer delicious and convenient meal options for any night of the week.
