We are all familiar with the saying not to get upset over spilled milk, but what about spoiled milk? Discovering that your milk has gone bad can be quite frustrating. While milk is a staple in many British households, not everyone is aware of what causes it to spoil.

Understanding the science behind milk spoilage can help extend its shelf life. Spoilage occurs when bacteria in the milk multiply, converting lactose into lactic acid. This process results in a sour taste and a thick, lumpy texture.

While it is inevitable that milk will eventually spoil, there are ways to slow down this process. Avoid introducing new bacteria by refraining from drinking directly from the bottle. Keeping milk well-chilled is crucial, as bacteria multiply more rapidly above 4°C.

The shelf life of milk depends on the type of milk and how it is handled. Pasteurized milk, the most common type in the UK, undergoes a heating process to eliminate harmful bacteria, extending its shelf life to up to 10 days unopened and three to seven days once opened.

Alternative milk options, such as oat milk, offer different shelf lives. Refrigerated oat milk lasts around 7-14 days unopened, while UHT oat milk can last months unopened but must be consumed within 7-10 days after opening.

Filtered milk, like Arla Cravendale, undergoes additional filtration to reduce microbes, resulting in a longer shelf life of seven days after opening and 21 days unopened. UHT milk, heated to a high temperature, can last up to six to nine months unopened and 7-10 days once opened.

Proper storage is essential for maintaining milk freshness. Keep your fridge at around 2-3°C and store milk towards the back where it is cooler, avoiding the warmer fridge door.

Filtered milk lasts longer due to the removal of impurities during the filtration process. Packaging in opaque bottles protects the milk from light, further extending its freshness.

To determine milk freshness, conduct a simple test: smell it for a neutral or slightly sweet aroma, check for lumps or thickness, perform a hot water test for curdling, and taste for sourness.

In conclusion, understanding milk spoilage and proper storage techniques can help prolong its freshness, ensuring you can enjoy your milk for longer.
