Most individuals who cook at home often prioritize selecting a high-quality steak cut and achieving the perfect sear on their steak.

Nonetheless, a popular YouTuber known as ThatDudeCanCook asserts that one of the key differences between restaurant-made and homemade steaks is often overlooked. In a recent video, he highlighted that restaurants excel at creating exceptional pan sauces, which many home cooks fail to replicate. According to the chef, the key is to start with a well-seasoned steak in a hot pan with a touch of oil.

Once the steak is in the pan, ThatDudeCanCook recommends moving it to a clean spot after a minute to ensure even browning before flipping it after about two minutes.

After cooking, the steak should be removed from the pan to rest while preparing the sauce. Shallots and crushed garlic are quickly sautéed before lowering the heat and adding butter.

The steak is then returned to the pan and basted in sizzling butter for approximately 90 seconds. Towards the end, thyme is added, and the meat is rested for half the time it was cooked.

In crafting the sauce, ThatDudeCanCook utilizes the same pan to combine red wine, beef stock, balsamic vinegar, thyme, and black pepper. Cold butter is whisked in to create a rich finishing sauce.

This advice is supported by numerous culinary professionals and chefs.

Bon Appétit underscores that pan sauces are often underestimated despite their ability to provide a restaurant-quality dining experience. The publication emphasizes that sauces made from the caramelized remnants in the pan can add significant depth of flavor.

Renowned French chef Michel Dumas also advocates for creating steak sauces using ingredients like shallots, stock, and butter.

Moreover, BBC Good Food recommends using red wine, stock, and shallots in the same pan where the steak was cooked.

Experts agree that mastering the right technique is more important than using expensive ingredients. Chefs interviewed by Allrecipes stress the importance of proper seasoning, high heat, butter basting, and resting to achieve restaurant-level results at home.

For ThatDudeCanCook, the finishing sauce remains the crucial element that sets restaurant steaks apart from others.
